Ingredients

Original recipe (1X) yields 12 servings

  • 1 ½ cups white sugar

  • 1 cup light corn syrup

  • 1 teaspoon salt

  • 2 cups heavy cream

  • ½ cup butter at room temperature

  • 1 teaspoon vanilla extract

Directions

  1. In a large heavy saucepan, combine the white sugar, corn syrup, and salt. Bring to a boil and heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.

  2. Stir in the butter and heavy cream carefully - the mixture will bubble up. Remove from the heat and stir in the vanilla. Cool slightly before dipping apples or other fruit; caramel should cling to a spoon and drip slowly. Let apples set on waxed paper or parchment.

This quick tomato and bean soup Provencal is my version of a traditional soup from the Provence region of France. It’s a satisfying soup that comes together quickly. Serve with crusty bread, or enjoy with a slice of quiche.

Banana Cheesecake with Banana Cream Pie Topping

Banana Cheesecake with Banana Cream Pie Topping

This simple recipe is a combination of banana cheesecake and banana cream pie all rolled into one dessert! It uses an Oreo®-cookie crust instead of the traditional graham cracker crust, adding a bit of a chocolate accent. Plus, it uses fat-free cream cheese, but proves to taste rich and creamy for a banana-y treat! Garnish with whipped cream and sliced bananas, if desired.

Instant Pot Hamburger Soup

Instant Pot Hamburger Soup

Easy and delicious soup with a nice thickness. You can make it in the Instant Pot or on the stovetop. When this cools, it will be very thick, but it thins out when reheated. Freezes very well.

Veggie Quinoa

Veggie Quinoa

I blundered into this delicious mix of ingredients while trying to use up leftover vegetables in the fridge. Even friends who 'don't like vegetarian cooking' have enjoyed it. I like the slightly bitter taste of unwashed quinoa (just check for unwanted debris before you use it), but most recipes call for rinsed quinoa.
