Watermelon Carpaccio

Ingredients

Original recipe (1X) yields 4 servings

  • 1/2 small watermelon

  • 5 basil leaves, or more to taste

  • 2 tablespoons pepitas or a nut of your choice

  • 1/4 cup crumbled feta

  • 1 tablespoon lemon balsamic glaze, or to taste

Directions

  1. Wash the outside of the watermelon with a fruit and veggie cleaner. Cut watermelon in half. With flesh of watermelon facing down, cut thin slices.

  2. With a paring knife, remove the rind from the watermelon. Cut watermelon slices into triangles.

  3. Arrange on a platter and top with feta and pepitas. Drizzle with lemon flavored balsamic glaze and serve.
