1 teaspoon ground black pepper

4 cups baby spinach, rinsed and dried

2 cups grape tomatoes
-
1 cup fresh bocconcini cheese, cut into bite-sized pieces

1 cup minced red onion
Directions
-

Combine spinach, arugula, tomatoes, bocconcini cheese, and onion in a pretty serving bowl. Shake vinaigrette vigorously to combine; drizzle over salad to serve.
Editor's Note
The term "bocconcini" refers to a ball of fresh mozzarella about 1-inch in diameter. Since this recipe calls for the cheese to be cubed anyway, feel free to buy any size ball of fresh mozzarella.
