Ingredients

Original recipe (1X) yields 4 servings

  • 4 tablespoons olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, chopped

  • 14 ounces fresh mushrooms, sliced

  • 10 ounces clean fresh spinach, roughly chopped

  • 2 tablespoons balsamic vinegar

  • ½ cup white wine

  • salt and freshly ground black pepper to taste

  • chopped fresh parsley, for garnish

Directions

  1. Heat olive oil in a large skillet over medium-high heat. Sauté onion and garlic in oil until tender. Add mushrooms and fry until they begin to shrink, about 3 to 4 minutes. Toss in spinach and sauté, stirring constantly for a few minutes, until spinach is wilted.

  2. Add vinegar, stirring constantly until it is absorbed, then stir in white wine. Reduce heat to low and simmer until wine is almost completely absorbed.

  3. Season with salt and pepper to taste and sprinkle with fresh parsley. Serve hot.

Pouding Chomeur

Pouding Chomeur

Though it translates to 'unemployed man's pudding,' pouding chomeur isn't cheap to make. The good news is you don't really need to eat this more than a few times a year anyway. It's the perfect dessert to pair with summer fruit or vanilla ice cream. If you use a bigger baking dish than I did, and pour over all the maple cream syrup, your cake should float over a pool of what will eventually be your sauce. If you just use a deep pie dish like I did, then just serve the extra sauce on the side.

Banh-Mi Style Vietnamese Baguette

These are by far the best sandwiches to serve your guests and yourself! The ingredients are fresh, delicious, popular and fills your mouth with marinated joy. You can usually find the high-caloric sandwich (variety of meat on mayonnaise) in your local Vietnamese baguette shop but here is a hearty Vegetarian version (if you do not use fish sauce) using portabello mushrooms.

Julene's Spelt Cookies

These are a heartier version of the traditional chocolate chip cookie recipes. Using spelt flour, which is higher in protein and lower in carbohydrate, is a very nice change. The cookies are easy to make and are delicious! Spelt flour is now available in many grocery stores and all health food stores. Try adding sunflower seeds, almonds, shredded coconut, or oats to the batter for something different!
