Catfish Cakes

Catfish cakes are a delicious alternative to Maryland crab cakes. Plus, catfish is cheaper than crabmeat.

Ingredients

Original recipe (1X) yields 8 servings

  • 1 pound catfish fillets

  • 2 ½ cups coarsely crushed buttery round crackers

  • 1 medium onion, chopped

  • 1 large egg

  • 1 tablespoon creamy salad dressing (e.g. Miracle Whip)

  • 1 teaspoon prepared yellow mustard

  • ½ teaspoon Old Bay Seasoning TM, or to taste

  • ¼ cup vegetable oil for frying, or as needed

Directions

  1. Place catfish in a saucepan with enough water to cover; bring to a boil. Cook until fish flakes easily with a fork. Remove from heat and drain water.

  2. Mash fish in the saucepan. Stir in crackers, onion, egg, salad dressing, mustard, and Old Bay until evenly blended. Form into 8 patties.

  3. Heat oil in a large, heavy skillet over medium-high heat. Fry patties in hot oil until golden brown on both sides. An instant-read thermometer inserted into the center of a patty should read at least 145 degrees F (63 degrees C). Drain on a paper towel-lined plate and serve hot.
