Grandma's Coconut Pies

Ingredients

Original recipe (1X) yields 16 servings

  • 5 eggs

  • 2 cups white sugar

  • ¾ cup buttermilk

  • ½ cup melted butter

  • 1 (10 ounce) package flaked coconut

  • 1 teaspoon vanilla extract

  • 2 (9 inch) unbaked pie crusts

Directions

  1. Preheat oven to 350 degrees F (175 degrees C.)

  2. In a large bowl, beat eggs and sugar until smooth. Blend in buttermilk and melted butter. Stir in the coconut and vanilla. Pour filling into 2 - 9 inch pie shells.

  3. Bake in the preheated oven for 45 to 50 minutes, or until golden brown.
