Ingredients

Original recipe (1X) yields 4 servings

  • ¾ cup shredded mozzarella cheese

  • 2 ounces cream cheese

  • 1 large egg

  • cup almond flour

  • 2 teaspoons baking powder

  • ¼ teaspoon garlic powder

  • ½ cup shredded Cheddar cheese

Directions

  1. Place mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave on high, 20 seconds at a time, until melted.

  2. Whisk egg in a bowl until beaten. Mix in almond flour, baking powder, and garlic powder until well combined. Work mozzarella mixture into the dough until sticky. Stir in Cheddar cheese.

  3. Transfer the dough to a sheet of plastic wrap and fold plastic wrap over the dough. Gently work the dough into a ball. Refrigerate for 30 minutes.

  4. Preheat the oven to 425 degrees F (220 degrees C). Grease a baking sheet or line with parchment paper.

  5. Remove the dough from the refrigerator and unwrap. Cut dough into 4 equal pieces and roll each piece into a ball. Cut each ball in half to form a top and bottom bun. Place dough, cut-side down, on the prepared baking sheet.

  6. Bake in the preheated oven until golden and set up, 10 to 12 minutes.

This bulgogi is a great dish to make with beef tri-tip. An acidic marinade and slicing thinly across the grain of the meat turn this inexpensive tough cut tender.

Stracciatella Soup

Stracciatella Soup

Stracciatella soup is often referred to as "Italian egg drop soup," which is fine, but knowing the name actually means little, torn rags or shreds works so much better metaphorically. When you've been run ragged, stracciatella is always there for you. As you eat this, hopefully with some nice crusty bread, imagine all those little "rags" floating in the bowl are all your torn-up problems, both real and imagined. They were there, and then they were gone. You just won — with soup.

These Instant Pot ribs are seasoned with a delicious spice mix and cooked with apple cider vinegar and barbecue sauce. They're fall-off-the-bone delicious and ready in under an hour from start to finish. I've had zero complaints about these sweet and spicy ribs from my family of seven, so that's a win for me!
