Ingredients

Original recipe (1X) yields 8 servings

  • 1 (24 ounce) container full-fat cottage cheese

  • 1/2 cup peanut butter

  • 1/3 cup pure maple syrup

  • 2 tablespoons peanut butter powder

  • 1 tablespoon sugar-free peanut butter syrup, such as Torani®

  • 1 teaspoon vanilla extract

  • 1/8 teaspoon salt

Directions

  1. Combine cottage cheese, peanut butter, maple syrup, peanut butter powder, peanut butter syrup, vanilla, and salt in blender cup of a powerful blender such as a Vitamix. Blend until completely smooth, using a tamper if needed.

  2. Pour into a freezer-safe container. Freeze until consistency is that of soft-serve ice cream, stirring every 30 minutes to avoid ice crystals, about 2 hours.

    Cook’s Note

This is best served immediately. If ice cream freezes completely, let sit on counter 10 to 15 minutes to soften; stir and serve.

A food processor can be used in place of a Vitamix.
