Ingredients

Original recipe (1X) yields 4 servings

  • 1 (9 ounce) roll Mexican chorizo

  • 1/3 cup chopped onions

  • 2 cloves garlic, pressed

  • 3 cups chicken broth

  • 1 cup diced potatoes

  • 1/2 tablespoon chicken bouillon granules (such as Knorr®)

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon Mexican oregano

  • 1/3 cup heavy cream

  • salt and freshly ground black pepper to taste

Directions

  1. Combine chorizo and onions in a soup pot over medium heat and cook until onions are soft and translucent and chorizo is fully cooked, 7 to 8 minutes. Add garlic and cook until garlic is fragrant, about 1 minute more.

Chocolate Santafereño (Colombian-Style Hot Chocolate)

Chocolate Santafereño (Colombian-Style Hot Chocolate)

My Colombian grandmother (known as abuelita or "Abi" for short) made this treat for my mom and aunt when they were kids. The cheese gets gooey and stringy, and you can use a spoon to dig out little bites of salty cheese that pair perfectly with the bittersweet hot chocolate. You can use mozzarella, shredded Swiss cheese, or crumbled Oaxacan cheese.

Kung Pao Chicken

Kung Pao Chicken

This tasty kung pao chicken is similar to what is served in Chinese restaurants. It's easy to make, and you can be as creative with the measurements as you want. You can't go wrong! The sauce reduces until nice and thick.

Smoked Fish Dip

Smoked Fish Dip

I think this fish dip recipe is world-class and puts most others to shame! It is served in several prominent restaurants on the Gulf Coast of Florida. Serve with crackers, lemon or lime wedges, and capers.

Authentic Vietnamese Spring Rolls (Nem Ran Hay Cha Gio)

Authentic Vietnamese Spring Rolls (Nem Ran Hay Cha Gio)

These Vietnamese fried spring rolls are a recipe I learned while traveling through Vietnam. The ingredients are relatively simple and easy to find in any grocery store. I've cooked this several times since returning, and it's always been a hit. They taste great with dipping sauce.

Michael's Focaccia Bread

Michael's Focaccia Bread

This version of the classic focaccia is easy to make while remaining authentic and true to the original. This may be the fastest yeast bread you make; it takes only one hour from conception to completion. Romano or Asiago cheeses are nice to use instead of Parmesan cheese.
