Hawaiian Pizza Quesadillas

I made this pizza quesadilla when I was craving Hawaiian pizza but only had flour tortillas on hand. It's now my favorite quesadilla! I like to mix sour cream and salsa in a small bowl for dipping.

Yield:
10 quesadillas

Ingredients

Original recipe (1X) yields 10 servings

  • 10 flour tortillas

  • 1 ½ pounds sliced ham

  • 3 (8 ounce) packages shredded mozzarella and Cheddar cheese blend

  • 1 (8 ounce) jar salsa

  • 1 (15 ounce) can pineapple chunks, drained

  • 1 (8 ounce) carton sour cream (Optional)

Directions

  1. Heat a griddle over medium-high heat. Toast one side of a tortilla, 1 to 2 minutes. Lay 2 to 3 slices of ham on the other side of the griddle to heat through. Flip toasted tortilla over, sprinkle with mozzarella and Cheddar cheese blend, layer with hot ham, spread with desired amount of salsa, sprinkle with desired amount of pineapple, and fold tortilla in half.

  2. Turn quesadilla over and continue to cook until cheese is melted and tortilla has reached desired crispness, 2 to 4 minutes. Cut into wedges with a pizza cutter. Repeat with remaining ingredients. Serve with sour cream.

Cathead Biscuits

Cathead Biscuits

This is the old-time recipe from our grandmamas. There is no real measurement in this for the shortening. Wonderful and tasty heavy biscuit from the old times. Great with homemade sausage gravy. Always always always use White Lily® flour for the fluffiest biscuits. I usually don't always use all of the buttermilk. I seem to usually have just under a 1/4 cup leftover.

Quick and Easy Pretzel Bites with Nutella® Dipping Sauce

Very quick and easy pretzel bites with two dipping sauces. This came together kind of by accident when the kids wanted a snack after school. We have made homemade pretzels before and I have to admit that was a little time consuming. The trick with this shortcut is the baking soda water bath. I love Nutella®. Enjoy!

Nutty Pina Colada Biscotti

Nutty Pina Colada Biscotti

A refreshing biscotti reminiscent of the tropical drink. Great with tea or coffee! I never really measure the ingredients after rum but I've tried to approximate for you... My friends LOVE this recipe!

Lahmacun Turkish Pizza

Lahmacun Turkish Pizza

This Turkish-style pizza is a Turkish flat bread layered with a fresh sauce composed of tomatoes, sweet bell peppers, and minced lamb cooked with a flavorful selection of Mediterranean spices. It is normally garnished with fresh salad and a creamy garlic sauce and or a tangy zesty hot red pepper sauce. It is a really light meal, but filling and flavorful. I find it worth the time to make if I can't get it from my favorite Turkish bakery in my old neighborhood in Amsterdam. For the best flavor, make the topping the night before you make the pizza.
