Pineapple Casserole

This pineapple casserole is a Southern staple. I serve it at all my cookouts and it's always a favorite. It's my grandmother's recipe that she used to make every Easter. She's not happy when my extended family calls this "my" recipe, but I always give her credit!

Can You Make Pineapple Casserole Ahead of Time?

You can assemble the casserole up to two days in advance, but wait to add the topping until right before baking. Store the untopped casserole (covered tightly in the refrigerator) until you’re ready to eat. Remove it from the fridge, add the topping, and bake according to the recipe.

How to Store Pineapple Casserole

Store your leftover pineapple casserole in an airtight container in the refrigerator for up to four days.

Can You Freeze Pineapple Casserole?

We don’t recommend freezing pineapple casserole, as it will become mushy during the freezing and thawing process. Try to enjoy it within a few days!

“This was absolutely delicious,” raves Leora. “Being from the Northeast, I never heard of this dish before, but wanted to try it as I had some pineapple to use up. It’s very sweet and would make a wonderful addition to any other side dishes at the table...or to simply eat by itself for brunch!”

“One of my absolute favorite recipes of all time,” says sweetpealifestyle. “Total comfort food.”

“I added some crushed dry crackers on the very top to add a little extra crunch,” according to Candice Parr. “I will definitely be making it again!”
