Simple Peach Salsa

This is a super-simple peach salsa that tastes great as a dip or as a side to grilled meat or chicken. I like to use Espelette pepper (piment d'Espelette), which is a special French ground red pepper that can be found online or in specialty stores. I listed cayenne pepper as a substitute.

Goan Pork Vindaloo

Goan Pork Vindaloo

Traditional Goan pork vindaloo is flavored with chiles, garlic, and vinegar. It's spicy and tangy at the same time, and it will leave your taste buds tingling for more! Serve with rice or crusty rolls.

Spicy Orange Bison Balls

Spicy Orange Bison Balls

The retro classic cocktail meatballs in grape jelly inspired this spicy orange bison balls recipe. I took that idea, along with my love of spicy orange beef, and came up with this combination.

Pineapple Bread Souffle

Pineapple Bread Souffle

So simple and so delicious you'll want to make an extra one for the next day. It's always the requested dish to bring to parties, from picnics to Thanksgiving. You don't know whether to eat it as a side dish or dessert, but it will be gone either way. My mom calls it 'white trash souffle' because it's best made with that long-lasting, favorite white bread! If desired, garnish with pineapple slices or maraschino cherries.

Coconut Chicken Tenders

Coconut Chicken Tenders

These coconut chicken tenders are nicely crisp from the coating and baking them on a rack helps to really keep them as crisp as possible. The dipping sauce adds a creamy sweet and spicy flair as well.

Sweet Potato Banana Pancakes

Sweet Potato Banana Pancakes

I fell in love with the sweet potato pancakes at Cracker Barrel. I decided to come up with my own healthier version. These sweet potato banana pancakes are what I put together, and they are a hit every single time I make them! Not only are they delicious, but they are also very good for you. Win-win! These pancakes are loaded with all-around nutrition and taste delicious with pretty much any topping, so just add the topping of your choice. I like honey, agave, or the maple agave syrup from Trader Joe's. Enjoy!
