Ingredients

Original recipe (1X) yields 4 servings

  • aluminum foil

  • 2 large white onions, sliced into 1/4-inch rings

  • 8 ounces baby bella mushrooms, sliced

  • 2 cloves garlic, thinly sliced

  • 4 tablespoons butter, cut into 4 pieces

  • 5 tablespoons steak seasoning (such as Dale's®)

Directions

  1. Preheat an outdoor grill for medium heat.

  2. Fold an 18-inch wide piece of aluminum foil so it is square.

  3. Place onions, mushrooms, and garlic in the middle of the foil. Arrange butter pieces on top of vegetables and drizzle with steak seasoning. Bring 4 corners of the foil together in the center, and crimp any open spaces to seal packet.

  4. Place the foil packet on the preheated grill and cook until vegetables are tender, about 45 minutes. Remove from grill, open packet carefully, and serve.

Cook’s Note

This can be cooked in the oven, but your guests will be more impressed when they learn it came off the grill.

Surf and Turf

Surf and turf is a combination of seafood and steak. This restaurant-worthy recipe grills marinated shrimp and filet steaks for a deliciously simple way to make a special dinner. You probably have most of the ingredients for the shrimp marinade in your pantry already.

Chef Salad for One

Chef Salad for One

I love to have a big chef salad for dinner, sometimes, and there are enough ingredients to make a full plate! This recipe serves one, but you can easily multiply it for more servings. These ingredients and quantities are perfect for me, but if you don't like an ingredient, leave it out. If you love bacon, have more! Customize to your or your family's delight. I call this salad a "composed" salad, where the ingredients are placed around the plate, and all the colors are showcased. You can toss it, if you prefer. It's delicious with ranch dressing, but it would also be very tasty with blue cheese dressing.

Chilean-Style Sopaipillas

Chilean-Style Sopaipillas

This is a traditional Chilean snack, or maybe an appetizer. The truth is that it's a snack eaten during wintertime, especially when it rains. It is typical to arrive home after walking through the rainy streets of Santiago and sit down to have a cup of tea and eat a couple of sopaipillas. You can also eat ones sold by street vendors, but they usually don't taste as good as homemade ones. If you can't find zapallo, pumpkin is a good substitute.
