Thai Sticky Black Rice Pudding

Thai sticky black rice pudding is a great Thai dessert recipe! I originally had this dish at my favorite Thai place and decided to try to recreate it. It almost tastes like a cobbler and ice cream. Love this dessert! Top with coconut ice cream if desired.

Ingredients

Original recipe (1X) yields 4 servings

  • 3 ½ cups water

  • 1 cup black rice

  • ¾ teaspoon salt

  • 1 cup unsweetened coconut milk

  • ½ cup white sugar

Directions

  1. Combine water, black rice, and salt in a saucepan; bring to a boil. Reduce heat; cover and simmer for 40 minutes.

  2. Stir in coconut milk and sugar; bring to a boil. Reduce heat; simmer, uncovered, until rice reaches a sticky consistency, about 30 minutes.

  3. Cool. Stir and serve.
