Baked Gochujang Chicken Thighs

These chicken thighs are baked with gochujang, a Korean red chili paste that is tangy, salty, and very hot. The heat in this sauce is moderated by sesame oil, rice wine vinegar, honey, soy sauce, ginger, and garlic. If you like it hot, simply add more gochujang until your taste buds yell, "Uncle!" We like this with simple steamed broccoli and white rice.

Ingredients

Original recipe (1X) yields 4 servings servings

  • 1 tablespoon gochujang paste, or to taste

  • 2 teaspoons rice wine vinegar

  • 2 teaspoons honey

  • 1 teaspoon sesame oil

  • 1 teaspoon soy sauce

  • 1/2 teaspoon ground ginger

  • 1/2 teaspoon garlic powder

  • 8 boneless, skinless chicken thighs

  • 1/4 cup chopped fresh cilantro, or to taste

  • 1 tablespoon sesame seeds

  • 1 lime, sliced

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Line a sheet pan with aluminum foil; place a baking rack on the foil.

  2. Whisk gochujang paste, rice vinegar, honey, sesame oil, soy sauce, ginger, and garlic powder together in a small bowl to make a sauce.

  3. Pat chicken dry with paper towels; brush both sides of chicken pieces with sauce. Place chicken on the rack in the prepared pan.

  4. Bake chicken in the preheated oven, until chicken is no longer pink in the center and juices run clear, 30 to 35 minutes. An instant-read thermometer should read at least 165 degrees F (74 degrees C). Sprinkle with cilantro and sesame seeds, and serve with lime wedges.

Cook's Note:

Gochujang and soy sauce are very salty. To keep salt levels down, there is no added salt in this recipe.

Ash reshteh is a wonderful soup that's traditionally made with Persian noodles called "reshteh." You can find them in Middle Eastern stores or use linguine pasta as a substitute. This hearty spiced soup topped with yogurt and fried red onions is a Persian New Year tradition.

This roasted chicken is perfectly seasoned and cooked just the way my grandmother used to make it. The method used in this recipe results in the juiciest chicken! We loved to nibble on the celery after it was cooked.

Dried plums and currants tossed with salted, roasted almonds, creme de cassis, and mint is the stuffing for my rolled lamb roast. It's a very easy way to dress up a lamb roast during the holidays. The simple herb rub adds just the right amount of seasoning along with fresh garlic inserted into the top of the roast. My balsamic basil fig sauce creation drizzled over the sliced lamb is the perfect finish touch and extremely flavorful thanks to the fresh basil.

This delicious iced peach tea tastes eerily similar to a famous Italian chain restaurant's version. Serve over ice and garnish with peach slices, if desired.
