Ingredients

Original recipe (1X) yields 4 servings

  • 2 tablespoons oil, divided

  • 1 (1 pound) package beef stew meat, cut into 1/2-inch cubes

  • 1 pinch salt and pepper to taste

  • 1 cup water

  • 2 pounds onions, chopped

  • 2 whole cloves

  • 2 large bay leaves

  • 1 cube beef bouillon granules

  • 1 tablespoon vinegar, or more to taste

  • 1 teaspoon white sugar

  • 1 teaspoon curry powder, or to taste

  • 1 tablespoon potato starch

Directions

  1. Heat 1 tablespoon oil in a pot over medium-high heat and cook beef stew meat until browned on all sides, 5 to 10 minutes. Season with salt and pepper. Pour in water, bring to a boil, reduce heat, cover, and simmer over low heat for 45 minutes.

  2. Heat 1 tablespoon oil in a skillet and cook half of the onions over medium-low heat until they are very soft and are starting to caramelize, about 10 minutes. Add sauteed onions and uncooked onions to the pot with the meat. Add cloves and bay leaves and simmer for 45 more minutes. Season with beef bouillon.

  3. When meat is cooked through, season with vinegar, sugar, and curry powder. Remove 1 tablespoon of liquid and stir together with potato starch in a small bowl to make a slurry. Add slurry back to the stew to thicken. Cook for 1 to 2 more minutes.

This rhubarb pineapple pie has a wonderful flavor and unlike those on the site, it does not contain tapioca. It is an old recipe that's easily made. Using young rhubarb makes this recipe unbeatable in taste and texture. I am frequently asked for this recipe.

Chef John's Fresh Salmon Cakes

Salmon cakes are one of my go-to emergency meals. Every once in a while I like to use fresh salmon. Salmon is one of those products, like chicken, that's very easy to get into a rut with. People generally find a few recipes that work for them, and just stay with those, but this fairly simple preparation should be easy to add to anyone's rotation. Serve with lemon wedge and remoulade sauce. You can use any bread crumbs instead of panko breadcrumbs, if desired.

Al Kabsa (Traditional Saudi Rice and Chicken)

Al kabsa was the first Arabic dish I ever made. It turned out extremely delicious and is a new favorite. Serve with fresh mixed cucumber, carrot, lettuce, and tomato salad — preferably with a little lime vinaigrette. Some fresh pita bread on the side would also be nice. Saudis like their kabsa with a hot sauce called shattah. Enjoy!
