Bacon Mushroom Swiss Meatloaf

This meatloaf is full of flavor, and a delicious twist on an old favorite. Bacon, onion, mushrooms, and Swiss cheese are added to ground beef and baked to perfection.

Ingredients

Original recipe (1X) yields 6 servings

  • 12 ounces raw bacon, chopped and divided

  • 1 small white onion, chopped

  • 5 button mushrooms, chopped

  • 1 ½ pounds extra-lean ground beef

  • 1 egg

  • ¼ cup evaporated milk

  • 6 ounces Swiss cheese, shredded and divided

  • ½ cup cornflake crumbs

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Cook 12 ounces bacon in a skillet over medium heat, turning occasionally, until browned. Transfer to a paper-towel-lined plate with a slotted spoon; set 1 tablespoon aside. Discard all but 1 tablespoon bacon grease. Add onion and mushrooms to skillet; cook until soft. Remove from heat.

  3. Combine beef, egg, and milk in a large bowl. Stir in onion and mushrooms. Add about 4 ounces Swiss cheese, and all but 1 tablespoon bacon; stir to combine. Stir in cornflake crumbs until well blended. Shape into a loaf; place in a meatloaf pan.

  4. Bake in the preheated oven for 1 hour. Drain fat; sprinkle with remaining 2 ounces Swiss cheese and reserved 1 tablespoon bacon. Continue baking until cheese is melted, about 5 minutes.
