1 slice multigrain bread

1 pound ground buffalo meat

1 onion, diced

1 large egg, lightly beaten

1 teaspoon mustard powder

¾ cup canned diced tomatoes, drained

1 teaspoon salt

1 pinch ground black pepper

⅓ cup ketchup
Directions

Preheat the oven to 350 degrees F (175 degrees C). Crumble bread into crumbs and set aside. Grease an 8x8 inch baking dish.

Mix ground meat, onion, egg, mustard, tomatoes, salt, pepper, and bread crumbs in a large bowl until well combined.

Form meat mixture into a loaf shape about 8x4 inches and place in the middle of the baking dish. Spread ketchup evenly across top and sides of meatloaf.

Bake in preheated oven until meat is no longer pink and ketchup forms a glaze over meatloaf, about 1 1/2 hours. An instant-read thermometer inserted into the middle of meatloaf should read at least 165 degrees F (74 degrees C). Let stand 10 minutes before serving.

Use a slice of twelve-grain organic bread for the best results.
