  5. Arrange browned chops on top of mushroom mixture. Pour soup over chops. Cover, reduce the heat to medium-low, and simmer until chops are cooked through and no longer pink in the center, 20 to 30 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

Homemade Pickled Ginger (Gari)

Pickled ginger is called gari or amazu shoga in Japanese. It's served with sushi or sashimi and helps enhance the flavors and clear your taste buds. It's also great with Century Eggs, a Chinese delicacy. You can find prepared pickled ginger in pink or white at most Asian markets but I prefer to make my own and share with family and friends.

This sweet and creamy ricotta toast makes the perfect brunch or mid-day snack. Grilling the fruit adds a lovely caramelized flavor, topped with the sweetness from the honey, crunch from the almonds and brightness from the hint of fresh mint. Use a thick-cut crusty bread like sourdough so it can stand up to the toppings.

These Italian wedding cookies are sometimes called Mexican wedding cookies or butterballs and can be shaped into crescents. They're also delicious made with pecans or hazelnuts instead of almonds. Great for gifting! This recipe was given to me by a friend who grew up in central Europe; they are the best wedding cookies I've ever had.
