Chicken Limone

Chicken Limone

Chicken limone is a luscious way to prepare chicken cutlets. The lemon pan sauce, with shallots for a sweet onion note, and just a touch of cream, really boosts the flavors of the browned bits that remain in the pan. It’s well-balanced, with great lemon flavor but no sour notes. Like chicken piccata without the salty capers, it’s a great quick dish for a weeknight dinner with friends.

Caper Pesto

Caper Pesto

This fresh, herby pesto combines basil, dill, and capers with a bright twist of lemon and Parmesan for a zesty, aromatic spread. Perfect for pasta, sandwiches, or as a dip, this pesto puts a briny twist on a timeless Italian sauce.

These Italian meatballs are very easy to make, and since we skip the messy step of pan-frying the meatballs, it becomes downright simple! Here I use a standard half-beef/half-pork mixture. Once the meatballs are baked, add them to your favorite prepared tomato sauce and simmer for 1 to 2 hours.

Restaurant-Style Chicken Nachos

These chicken nachos are easy to prepare, delicious, and sure to be a big hit! Hearty enough for a meal. The key flavors are in the chicken topping which also makes a great filling for tacos and quesadillas. I recommend serving with sour cream and guacamole but you can be as creative as you like!
