Ingredients

Original recipe (1X) yields 4 servings

  • 1 pound ground bison

  • ½ cup panko bread crumbs

  • 1 large egg

  • 3 tablespoons Worcestershire sauce

  • 4 dashes hot sauce (such as Tabasco®)

  • 1 pinch granulated garlic

  • 1 pinch ground black pepper

  • olive oil cooking spray

  • 4 slices American cheese

  • 4 hamburger buns, split and toasted

Directions

  1. Preheat an outdoor grill for high heat and lightly oil the grate.

  2. Combine bison, bread crumbs, egg, Worcestershire sauce, hot sauce, garlic, and pepper in a large bowl. Form into 4 patties. Place patties on a baking sheet. Cover with foil and refrigerate until chilled, about 15 minutes.

  3. Spray patties with cooking spray. Cook on the preheated grill until hot and slightly pink in center, about 5 minutes per side. Top each patty with cheese slices. Continue cooking until cheese melts, about 2 minutes more. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

  4. Sandwich patties between toasted bun halves and serve.

Moist Turkey Burgers

Moist Turkey Burgers

I changed the recipe to make these deliciously juicy turkey burgers for more people. I caramelized the onions to give them more depth of flavor. I also added Dijon mustard and real garlic instead of garlic powder. I also cut down on the amount of bread crumbs and made them out of whole wheat bread to make them a little healthier. I also omitted the soy sauce for the same reason. They came out great. The only thing I would do differently next time is to give them just a little heat.

No Milk, No Wheat, Banana Pancakes

No Milk, No Wheat, Banana Pancakes

I came up with these banana pancakes without milk or wheat when a flourless banana pancake recipe I tried was mushy and difficult to flip. I adjusted the recipe and these came out puffy and light like traditional pancakes, though they contain no wheat flour, added sugar, or milk. Kids love the subtle banana flavor, too. Serve with butter and syrup of choice.

Okinawan-Style Pad Thai

Okinawan-Style Pad Thai

This is a famous dish popularized in Thailand. Although the recipe varies from cook to cook and region to region, this is a good attempt at recreating what I ate from Thai-owned hole-in-the-wall restaurants in Okinawa, Japan. Key to the flavor are the sugar levels, unsalted peanuts, peanut oil, and either oyster or fish sauce.
