3-Ingredient Lemon Scones

These scones are so quick and simple. They only have three ingredients and produce deliciously light scones. The bubbles in the lemon soda make them rise. There is no need to rub butter as in the traditional scone recipe. Serve hot with whipped cream and berry jam.

Ingredients

Original recipe (1X) yields 12 servings

  • cooking spray

  • 3 cups self-rising flour

  • 1 cup lemon-flavored soda

  • 1 cup heavy cream

Directions

  1. Preheat the oven to 425 degrees F (220 degrees C). Grease a baking sheet with cooking spray; lightly dust with flour.

  2. Sift self-rising flour into a large bowl. Combine lemon soda and cream and pour over the flour. Mix until dough is just combined. Turn dough out onto the prepared baking sheet. Flour your hands and gently pat dough into a large rectangle. Do not overwork the dough. Cut into triangles or squares.

  3. Bake in the preheated oven until golden, 10 to 12 minutes.

Cook's Notes:

The lemon soda adds a lot of air to the mixture. If you handle the dough too much, that airiness will be lost and the scones won't rise well.

To make a lower-calorie version, substitute plain soda water for the lemon-flavored one.

These crispy salmon croquettes are made with fresh salmon, but they cook quickly. The filling has onion, red bell pepper, and fresh parsley which adds so much flavor. Delicious as an appetizer with tartar sauce for dipping.

Instant Pot Chicken Tagine with Apricots and Chickpeas

Instant Pot Chicken Tagine with Apricots and Chickpeas

In this dish, the Instant Pot is used to create a dish reminiscent of a slowly braised stew in a traditional clay tagine. It's a sweet-and-savory, highly flavorful combo that will take you back to your Moroccan trip or inspire you to start planning for that Sahara camel trek. Chicken is cooked until tender with onions, garlic, turmeric, ginger, and cinnamon. Apricots steep in the broth. Serve with rice or couscous and Greek yogurt.

Ada (Adai)

Ada (Adai)

Ada (adai) is a dosa (crêpe) usually served at breakfast. It is made with a mixture of lentils and rice and is quite filling. One usually eats ada with podi (south Indian spicy chutney powder) and mango pickle (avakkai). Since the batter is made with raw lentils, it gets fermented easily. It will keep in the refrigerator for 1 or 2 days maximum.

These s'mores cupcakes take quite a bit of time (and dishes) to make—I won’t lie. However, the end result is a gorgeously delicious confection with a crisp graham cracker crust, rich chocolate cake middle, and a billowy toasted marshmallow frosting.
