Banana Pudding with Graham Crackers

I made this banana pudding with graham crackers recipe when I was craving the dish, but out of the traditional Nilla wafers. When I realized graham crackers would make nice even layers a snap, the idea to make it in an 8x8-inch pan came fast. It tastes amazing — crackers soften quicker than wafers. The addition of the whip cream topping makes this very creamy; the even layering means you taste all three elements in every bite!

Ingredients

Original recipe (1X) yields 9 servings

  • 3 ½ cups cold 2% milk

  • 2 (3.5 ounce) packages instant French vanilla pudding mix

  • 1 (1.3 ounce) envelope dry whipped topping mix (such as Dream Whip®)

  • ½ (14.4 ounce) package graham crackers, or more as needed

  • 2 large bananas, sliced, or more to taste

Directions

  1. Pour milk, pudding mix, and whipped topping mix into a large bowl; mix with an electric whisk or hand whisk until ingredients are combined and a thick pudding forms.

  2. Break graham cracker sheets in half to form squares.

  3. Cover the bottom of an 8-inch square baking pan with 9 graham cracker squares. Layer 1/2 of the banana slices on top in even rows and cover with 1/2 of the pudding mixture, using a spatula to spread it evenly. Repeat layers once more. Sprinkle top with graham cracker crumbs, if desired.

  4. Cover and refrigerate until fully chilled, 4 hours or longer. Cut into 9 squares to serve.

Cook’s Note

You could also top this with a layer of frozen whipped topping (such as Cool Whip); I omitted it due to my fiance's preferences.
