1 (9-inch) pie

Ingredients

Original recipe (1X) yields 8 servings

  • 3 cups sliced apples

  • 1 cup blueberries

  • 1 (9 inch) unbaked deep-dish pie crust

  • 3/4 cup all-purpose flour, divided

  • ½ cup white sugar

  • ¼ teaspoon salt

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon ground cinnamon, or more to taste

  • 1 cup plain yogurt

  • 1 egg

  • 1 teaspoon vanilla extract

  • ½ cup chopped pecans

  • ½ cup rolled oats

  • ¼ cup brown sugar

  • ½ cup unsalted butter

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C).

  2. Toss apples and blueberries together in unbaked pie crust.

  3. Combine 1/4 cup flour, white sugar, salt, nutmeg, and cinnamon in a bowl. Stir in yogurt, egg, and vanilla extract; pour over apples and blueberries.

  4. Combine remaining 1/2 cup flour, pecans, oats, and brown sugar in a bowl; cut in butter with 2 knives or a pastry blender until mixture resembles coarse crumbs. Set aside.

  5. Bake in the preheated oven for 15 minutes; reduce heat to 350 degrees F (175 degrees C) and continue baking until crust is lightly browned, about 30 minutes. Sprinkle crumb mixture over pie; continue baking until golden brown, about 15 minutes more. Cool before serving.

This homemade chili is delicious and goes great with cornbread or over corn chips for a chili pie! I like to use spicy pinto beans but if you use regular beans, you can up the chili powder in this recipe.

Authentic Swedish Pancakes

Authentic Swedish Pancakes

This Swedish pancakes recipe was taught to my father by his mother, who was born in Sweden. My father then passed this authentic recipe to me. Kids love them, and there are never any leftovers when I make them. Spoon melted butter over the pancakes and sprinkle with sugar or serve with lingonberry sauce. The pancakes can be made into larger cakes; however, the yield will be smaller. You can also use the batter to make crepes.

Quick and Easy Paella

Quick and Easy Paella

Consider this a gateway paella and the first step to a serious, lifelong addiction. When I first do a version of a classic dish like paella, I try to use a minimum number of ingredients and steps to focus on technique. After learning the method, you'll ideally use a wider variety of ingredients, like clams, mussels, squid, and chicken, which will make your rice that much more interesting. Garnish with extra virgin olive oil, freshly chopped flat-leaf parsley, and lemon wedges.
