Ingredients

Original recipe (1X) yields 12 servings

  • 2 large egg whites

  • 1 pinch salt

  • ½ cup white sugar

  • 2 cups sweetened flaked coconut

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet.

  2. Beat together egg whites and salt in a small bowl until soft peaks form. Add sugar 1 tablespoon at a time while beating at high speed until stiff peaks form. Continue to beat until glossy.

  3. Fold coconut into egg mixture. Drop mixture by the teaspoonful onto the prepared sheet, spacing about 2 inches apart.

  4. Bake in preheated oven until edges are light golden, about 12 minutes.
