Chef John's Cuban Sandwich

There are different recipes for Cuban sandwiches. Here's how I build my Cuban, or Cubano. I like to use pulled pork. Carnitas would work too. These ingredients and amounts are open to your own personal preferences, but here's a general idea.

These mini turkey pot pies can be topped any way you like — puff pastry, pie crust, or mashed potatoes — and make the most of your leftover turkey.

Cabbage Jambalaya

This is an easy recipe. My son doesn't like cabbage but will eat this like crazy. You can make it low-fat by using ground turkey and low-fat sausage. They won't know the difference.

Cranberry Sauce with Apples

Cranberry Sauce with Apples

This cranberry sauce with apples is made with fresh cranberries and Granny Smith apples, which add an extra layer of tart flavor to a classic cranberry sauce recipe. The pectin in the apples helps the sauce to set and and a bit of cinnamon adds fall flavor. Make this apple cranberry sauce several days in advance to relieve some of the holiday stress, then pull it out to serve with turkey and all of your holiday sides. Leftovers can be spread on toast or sandwiches, mixed into yogurt, used in baking, or dolloped over ice cream.

Potato Salmon Patties

My kids do not like anything fishy. I snuck these potato salmon patties by them and they loved them. I serve them as snacks, sandwiches, or as dinner with rice and a veggie on the side. Personally I like to dip them in horseradish and snack away!! Hope you like them.
