Ingredients

Original recipe (1X) yields 9 servings

  • nonstick cooking spray

  • 2 1/4 cups white sugar, divided

  • 2 cups all-purpose flour

  • 2 large eggs

  • 1 1/2 cups melted butter

  • 2 teaspoons vanilla extract

  • 2 pounds nectarines, pitted and sliced into 12 slices each

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Spray an 8x8-inch baking dish with nonstick cooking spray.

  2. Stir 2 cups sugar, flour, eggs, butter, and vanilla extract together in a bowl to make a smooth batter. Spread half of the batter into the prepared pan.

  3. Bake in the preheated oven until crust is golden brown, 20 to 25 minutes.

  4. Meanwhile, toss sliced nectarines with remaining 1/4 cup sugar. Spread fruit over base layer. Drop the remaining batter by spoonfuls evenly over fruit.

  5. Bake in the preheated oven until cobbler is golden, and fruit is bubbly, 28 to 35 minutes.

  6. Optional: Heat an air fryer to 400 degrees F (200 degrees C). Place cobbler in the air fryer until topping is crunchy, about 5 minutes.

Sweet Cornmeal Cake Brazilian-Style

Very easy and fast to make from scratch and healthy, too. In Brazil, this cake is a favorite alongside a cup of coffee for breakfast. It is very similar in texture to a cornmeal bread, but only this is a sweet cake instead. Stir your favorite seeds or walnuts into the blended batter before pouring into the pan, if desired.

It is brought to our neighborhood chili tasting each year and is the first one gone every year! Serve topped with green onions, cilantro, and shredded Cheddar cheese, if desired.
