A cool steak salad with juicy grilled sirloin, tomatoes, and crisp red onions, topped with blue cheese vinaigrette, is perfect for a hot summer night!

Ingredients

Original recipe (1X) yields 5 servings

  • 1 ¾ pounds beef sirloin steak

  • cup olive oil

  • 3 tablespoons red wine vinegar

  • 2 tablespoons lemon juice

  • 1 teaspoon Worcestershire sauce

  • 1 clove garlic, minced

  • ½ teaspoon salt

  • teaspoon ground black pepper

  • ¾ cup crumbled blue cheese

  • 8 cups romaine lettuce - rinsed, dried, and torn into bite-size pieces

  • 2 tomatoes, sliced

  • 1 small green bell pepper, sliced

  • 1 carrot, sliced

  • ½ cup sliced red onion

  • ¼ cup sliced pimento-stuffed green olives

Directions

  1. Preheat an outdoor grill for high heat and lightly oil the grate.

  2. Place steak on preheated grill and cook for 3 to 5 minutes per side or until desired doneness. Remove from heat and let sit until cool enough to handle. Slice steak into strips or bite-sized pieces.

  3. Whisk olive oil, vinegar, lemon juice, Worcestershire sauce, garlic, salt, and pepper together in a small bowl; stir in blue cheese. Cover and refrigerate.

  4. Arrange lettuce, tomato, pepper, carrot, onion, and olives onto chilled plates. Top with steak and drizzle with dressing.

Cook’s Note

I like to serve this salad with grilled French bread.
