Ingredients

Original recipe (1X) yields 16 servings

  • 2 ¼ cups whole wheat flour

  • cup millet

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 cup buttermilk

  • ½ cup vegetable oil

  • ½ cup honey

  • 1 egg, lightly beaten

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Grease 16 muffin cups.

  2. Whisk whole wheat flour, millet, baking powder, baking soda, and salt together in a large bowl. Combine buttermilk, vegetable oil, honey, and egg in a separate bow; stir into flour mixture just until evenly moistened. Spoon batter into the prepared muffin cups.

  3. Bake in the preheated oven until a toothpick inserted into centers comes out clean, about 15 minutes.
