Game Hen Stuffed with Wild Rice and Mushrooms

This game hen stuffed with wild rice and mushrooms recipe isn't too difficult, but it looks like an expensive restaurant meal! It is the perfect way to fix up that pheasant, duck, or even just a Cornish game hen from your local grocery store. This recipe is made with a Cornish game hen in mind, so if you are using a larger bird, you may want to adjust the amount of the ingredients.

Mean Green Guacamole Salsa

Mean Green Guacamole Salsa

This is a green salsa I learned while in Mexico. It is a green salsa with avocado and it is delicious! I always make it when we do carne asada. I am always begged for the recipe. Enjoy!

Creamy No-Bake Peach Tart

Creamy No-Bake Peach Tart

This creamy no-bake peach tart has a very light, peachy filling, and a lovely toasted almond press-in graham cracker crust. Use the best quality, ripest peaches you can find for optimal flavor. Give yourself plenty of time to make this—it requires at least 6 hours to chill.

Hatch Chile Verde

Hatch Chile Verde

Hubby and I are Hatch chile fanatics. We buy 50 pounds of roasted Hatch chiles when they are in season. We portion them out and freeze them so they are readily available. This chile verde does not call for tomatillos because I wanted the chiles to be the star of the recipe.

For this spinach artichoke chicken bake, sauteed cubes of boneless chicken breast, combined with artichoke hearts, fresh spinach, and diced tomatoes, bake under a crunchy breadcrumb and Parmesan cheese topping.
