Lamb Osso Buco Slow-Cooked

There are two tricks to this lamb osso buco recipe: browning the lamb shanks before they go into the slow cooker and reducing the sauce before serving. The result is an osso buco you'd be hard-pressed to distinguish from the labor-intensive classic.

Chef John's Ham and Cheese Calzones

Chef John's Ham and Cheese Calzones

Today calzones are most commonly stuffed with the exact same toppings that go on a pizza which, besides the crust issue, was one of my main problems with it. I mean, why not just fold a pizza in half, and call it a day? So, I decided to do what I hear is a more traditional filling featuring ricotta, fresh mozzarella, and ham. The result was as enjoyable as it was surprising.

During a visit to Barranquilla, Colombia, I got the chance to taste an arepa de huevo. My friend got the recipe for me and now it's a special treat. The fried dough coupled with the egg is beyond words. Such a tasty dish!

Chocolate Funfetti Cake

Sprinkles make everything more fun—and this chocolate funfetti cake proves it! To make the cake layers easier to frost, I recommend carefully wrapping them in plastic wrap, then placing them either in the fridge or freezer until chilled.

Mardi Gras King Cake

Mardi Gras King Cake

King cake is a New Orleans tradition that involves a pastry, a tiny plastic baby, and a party! The cake is baked with a tiny plastic baby hidden inside; whoever gets the slice with the baby in it has to host the next party. Make sure to buy a new tiny plastic baby so you can get the full effect from this cake! Sprinkle with purple, green, and gold sugar, or decorate with whole pecans and candied cherries.
