This tasty and easy elote dip is ready in just a few minutes and is reminiscent of the Mexican street corn sold by cart vendors. It's great served with Fritos or corn chips.

Ingredients

Original recipe (1X) yields 4 servings

  • 2 tablespoons Mexican crema (cream)

  • 1 medium lime, juiced

  • 1 tablespoon mayonnaise

  • 1 teaspoon ground cayenne pepper

  • ½ teaspoon salt

  • ½ teaspoon ground cumin

  • 1 (10 ounce) package corn kernels, thawed

  • ½ cup crumbled cotija cheese

  • 2 tablespoons chopped fresh cilantro

  • 1 small serrano pepper, finely chopped

Directions

  1. Combine Mexican crema, lime juice, mayonnaise, cayenne pepper, salt, and cumin in a large bowl until well blended.

  2. Add corn, cotija cheese, cilantro, and serrano pepper; stir until well combined.
