Jamaican Curry Chicken

I couldn't find a recipe I liked, so here is my family's version of 'curried' chicken. It brings back memories of a childhood spent enjoying food there, where there were very few dishes I wouldn't eat, vegetables or not. This dish is traditionally served on white rice or in a roti, but feel free to get creative!

Dutch cookie with caramel syrup between two thin cookies. Absolutely delicious! I lived in Holland for a year and fell in love with these cookies. I was so happy to finally find a recipe! These are made using a pizzelle iron.

I Made Trisha Yearwood's Charleston Cheese Dip and It's Dip Heaven

This is a copycat of Trisha Yearwood's Charleston Cheese Dip. My version is smaller but can easily be doubled for a crowd. With bacon in the filling and on the crunchy top, its dip heaven!

Spicy Thai Basil Chicken (Pad Krapow Gai)

Spicy Thai Basil Chicken (Pad Krapow Gai)

My version of this classic Thai dish has spectacular taste even with regular basil instead of Thai or holy basil. The sauce actually acts like a glaze as the chicken mixture cooks over high heat. The recipe works best if you chop or grind your own chicken and have all ingredients prepped before you start cooking.

Kachumbari

Kachumbari

This is a versatile, traditional African tomato-onion salad accented with spicy peppers. It's so very simple to make and also good as salsa, on crostini as an appetizer, or if there are leftovers, turn it into gazpacho by giving it a quick whirl in a blender or food processor.
