Colombian Lentils

This Colombian lentil dish is a great starter. You can make it with a bit more water, and it will become somewhat of a soup, or you can let it cook and eat it with a plate of rice.

Ingredients

Original recipe (1X) yields 3 servings

  • ½ cup lentils

  • 1 ½ cups water

  • 1 small tomato, chopped

  • 1 small onion, chopped

  • 2 teaspoons ground cumin

  • 1 teaspoon salt

  • 1 tablespoon vegetable oil

  • 2 small yellow potatoes, cubed

Directions

  1. Combine lentils, water, tomato, onion, cumin, salt, and oil in a large pot over medium heat; bring to a boil. Cook at a boil, stirring occasionally, until lentils are soft, about 30 minutes.

  2. Add potatoes and cook until potatoes are tender, about 15 minutes more.
