1 cup coconut flour

½ cup chocolate chips, or to taste

¼ cup shredded coconut

¼ cup rolled oats (Optional)
Directions

Preheat the oven to 375 degrees F (190 degrees C). Line two baking sheets with parchment paper.

Beat butter, brown sugar, and white sugar with an electric mixer in a large bowl until creamy. Add vanilla extract; beat in eggs, one at a time.

Combine almond flour, coconut flour, baking soda, and salt in a separate bowl; mix into butter mixture just until combined. Add chocolate chips, coconut, and oats; stir until just combined.

Scoop cookie dough onto the prepared baking sheets.

Bake in the preheated oven until browned, 12 to 15 minutes.
